Description
Blanc de Pacs comes from Parés Baltà, a family winery based at Pacs del Penedès outside Barcelona that farms all of its estates organically and biodynamically. It is the classic Penedès white blend of Xarel·lo, Parellada and Macabeo, drawn from several family plots at differing altitudes, from Finca Les Torres at 616 metres down to lower sites around 250 to 315 metres. The height brings cooler nights and a wider daily temperature range, which slows ripening and preserves acidity and aromatic freshness in the grapes. The must ferments at a controlled 16 degrees in stainless steel over about two weeks, keeping the wine clean and unoaked so the varietal character stays to the front. Xarel·lo gives structure and a subtle herbal note, Parellada lends florality and freshness, and Macabeo fills the middle with orchard fruit. The wine is pale straw with green tints. The nose shows green apple, pear and white flowers with a light aniseed edge. The palate is dry, light bodied and fresh, with crisp acidity and a clean finish. At 11.5 percent alcohol it is easy to drink. Serve chilled at 8 to 10 degrees as an aperitif or with fish, seafood and rice dishes. Vegan.
