Pardas revive the local Sumoll grape at Can Comas in the Penedès, an organic estate of varied soils. Sus Scrofa ferments and rests four months in concrete, with no oak, for a fresh, pale, savoury red of red fruit, rhubarb and earthy minerality.

Description
Sus Scrofa is an organic red from Celler Pardas, made at the recovered Can Comas estate in Torrelavit in the DO Penedès. Ramon Parera and Jordi Arnan rebuilt the abandoned farm from 1996 and now work its diverse soils, set between 200 and 300 metres above sea level under an irregular, mild and semi arid Mediterranean climate. This wine champions Sumoll, a difficult, high acid local variety that gives pale colour, bright red fruit and a savoury, herbal character. The wine is both fermented and aged in concrete for around four months, with no oak at all. Concrete is neutral and breathes slowly, so it builds texture and rounds the wine while preserving the fruit's freshness and the grape's natural transparency, letting the terroir come through unmasked. The colour is a light, almost translucent ruby. The nose shows fresh red berries, sour cherry and rhubarb with cracked pepper and an earthy, herbal note. The palate is light bodied and high in acidity, fresh and savoury, with fine grippy tannin and a stony finish. Serve cool, around 14 degrees, in a Burgundy glass. It is a vivid, food friendly red.
