Celler Pardas made this magnum from the last harvest of the century-old l’Ametller vineyard in Penedès. Pure Sumoll, aged six months in barrel and steel, it recalls a cross of Pommard and Barolo, with firm tannins, damp earth and bright red cherry fruit.
Description
Pardas Sumollades Magnum is a Penedès red from Celler Pardas, founded by viticulturists Ramon Parera and Jordi Arnan. It is a tribute to the century-old l'Ametller vineyard, made from its final harvest, and bottled in magnum. The wine is pure Sumoll, a difficult, late-ripening Catalan grape prized for high acidity and firm tannin. The old vines sit on poor Mediterranean soils that yield tiny crops of concentrated fruit, while cool nights and the influence of the nearby coast preserve the bright acidity that defines Sumoll, holding the alcohol to a restrained 12.5 per cent. Ageing runs six months split between barrel and stainless steel, the wood softening the grape's grip and adding a light savoury frame while the steel keeps the fruit fresh and direct. The wine is bright ruby, with a nose of red cherry, raspberry and dried herbs over damp earth, leather and black pepper. The palate is firm and structured, with grippy tannins, vivid red fruit and a long, savoury, earthy finish that the magnum format will reward with patience. Serve at sixteen to eighteen degrees, decanted ahead. It suits roast red meat and earthy dishes.
