Pardas grows this Sumoll on the old La Peca vineyard in the Penedes, a Mediterranean plot of clay and limestone. Fermented and aged seven months in cement and barrel, it is a pale, fragrant red of wild red fruit, fine acidity and a savoury herbal edge.
Description
Celler Pardas is the work of Ramon Parera and Jordi Arnan, who farm at Finca Can Comas in the inland Penedes. This wine comes from La Peca de Coll del Guix, an old single vineyard of the indigenous Sumoll grape set on clay over limestone in the warmer reaches of the appellation. Sumoll is a late ripening, high acid variety, naturally pale and aromatic rather than dark and tannic, and the cool inland nights preserve its freshness while the limestone lends a firm mineral spine. Vinification is gentle, with a soft maceration to protect the delicate colour, then seven months split between cement and used barrels. The inert cement keeps the fruit clean while the oak rounds the structure without adding obvious wood. The result is a light red of translucent ruby colour. The nose shows wild red berries, cherry and dried herbs over a stony, earthy base. The palate is fresh and supple, with bright acidity, fine grain and a savoury, slightly herbal finish. Serve lightly chilled at 14 to 15 degrees in a Burgundy glass. It suits roast chicken, mushroom dishes and lighter game.
