Panduro make this natural, organic red on Mallorca from the local Callet grape. Aged six months on lees in steel and barrel, it is light and low in alcohol at 11 percent, with bright red fruit, herbs and a savoury edge.
Description
Panduro Vinos is the Mallorca project of Ibon Apezteguia and Henrik Falk, working naturally and organically with the island's native Callet grape. Quartó is a light red farmed in the Balearic Islands. The Mediterranean climate is warm but tempered by sea breezes, and Callet is a thin-skinned variety that gives pale colour, modest tannin and a low alcohol level, here just 11 percent, making this a fresh and gentle red. After fermentation the wine spends six months on its lees, split between stainless steel and barrel. Lees ageing, the rest of the wine on its spent yeast, adds texture and a subtle savoury depth as the yeast cells break down and release compounds into the wine, while the steel keeps the fruit bright and the barrel rounds the edges. The colour is a light, translucent red. The nose shows fresh red berry, cherry and redcurrant with wild herbs and a faint earthy note, and the palate is light, juicy and saline, with soft tannin and a clean, savoury finish. Serve cool at 13 to 14 degrees. It suits charcuterie, roast pork, grilled fish and lighter dishes.
