Description
Cota 45 is the project of Ramiro Ibáñez, an oenologist central to recovering the wine memory of the Marco de Jerez in Cádiz, Andalusia. The Pandorga line revives Tintilla de Rota, a historic local red grape once used for sweet wines along this coast. The vines grow under a warm Atlantic influenced climate on the chalky albariza and sandy soils of the region, where strong sunlight ripens the fruit while sea breezes preserve freshness. The wine is farmed organically and made sweet by stopping fermentation early, which leaves natural residual sugar and keeps alcohol very low at 9.7 percent, then rested two months in barrel to settle and gain a light spice frame without heavy oak. The colour is bright ruby. The nose shows fresh red berries and cherry over plum, dried herbs and a turn of black pepper. The palate is sweet but lifted and gently warming, the low alcohol and coastal acidity keeping it light on its feet rather than heavy. Serve lightly chilled at around 12 to 14C in a small glass.
