    Trossos del Priorat is a small family winery that farms its own vineyards organically, and Pam de Nas blends the two classic Priorat varieties, Garnacha and Carignan, from both estate plots and old local vineyards. Priorat is defined by its llicorella, a slate and quartz soil that forces vines to root deep for water and gives the wines their dark mineral, almost smoky character. The steep terraces and hot dry summers cut yields and concentrate the fruit, while cooler nights keep the wine fresh. After fermentation it ages 12 months in French oak, enough to round the tannins through slow oxygen exchange and add spice without masking the site. The result is a deep red with aromas of dark berries and plum, dried herbs and cracked pepper over a stony, smoky base. The palate is full and firmly structured at 14.5 percent, with ripe fruit, mineral grip and a long savoury finish. Decant an hour ahead and serve at 17 degrees. It is a natural match for grilled and roast lamb.
