Palomo Cojo is a Rueda Verdejo from the Unesdi winery, grown on gravelly, stony soil. Fermented in stainless steel, it is a cool, easy white with green apple, citrus and a fresh herbal lift.
Description
Palomo Cojo is a white from D.O. Rueda made by the Unesdi winery, 100% Verdejo from selected vineyards on gravelly, stony soil. Rueda sits on a high plateau where the stony ground drains freely and wide day-to-night temperature swings hold acidity and aromatics in the ripening grapes, giving Verdejo its fresh, herbal character. The grapes are destemmed and fermented in stainless steel in a traditional way, with no oak, so the wine keeps its bright fruit and clean edge. The colour is pale straw with green tints. The nose is fresh and aromatic, with green apple and citrus peel over white flowers and the faint fennel-herb note typical of the grape. The palate is crisp and dry, with lemon, pear and melon carried by lively acidity to a clean finish. This is a cool, casual white made for early drinking rather than ageing. Serve well chilled at 8 to 10C. It works as an aperitif and with shellfish, white fish and salads.
