Description
Palliser Estate Sauvignon Blanc is made in Martinborough, in the Wairarapa region at the southern end of New Zealand's North Island. Founded in 1989, the estate farms ninety two hectares in one of the country's most respected districts. Martinborough has a cool, dry maritime climate with free-draining alluvial gravels over a river terrace, and the wide day-to-night temperature swing preserves the bright acidity and pungent aromatics that mark New Zealand Sauvignon. After a cool fermentation that protects the aromatic thiols, the wine is aged on its fine lees, which softens the mid-palate and adds a subtle texture and breadth without masking the fruit. The colour is pale lemon with green tints. The nose is fresh and lifted, with lemon, green apple and elderflower over white peach and a herbal, grassy edge. The palate is dry and crisp, the citrus and stone fruit carried by a clean line of acidity, with the lees weight giving a rounder shape than the leaner Marlborough norm and a saline finish. Serve well chilled at 8 to 10 degrees.

Serve with oysters, prawns and grilled white fish, where the crisp acidity and salinity lift the seafood. It is also the classic partner for fresh goat cheese and green salads, and cuts cleanly through creamy dressings and herby dishes.
