Description
Palacio de Bornos produce this varietal Verdejo in the D.O. Rueda, from their winery in La Seca, one of the historic estates of the region with production dating back to 1870. Verdejo is the flagship grape of Rueda, grown on a high plateau of gravel over clay and limestone where hot days and cold nights build ripe fruit while holding the acidity and the grape's savoury, herbal character. The grapes are sorted by hand, then fermented at controlled low temperature in stainless steel, which protects Verdejo from its tendency to oxidise and locks in the fresh aromatics without oak. The colour is pale with green glints, and the nose is intense and typical, with citrus fruit intertwined with dried herbs and a subtle hint of anise. The palate is dry and crisp, the lemon and green apple fruit carried by a firm acidity and a faintly bitter, herbal twist on the finish that marks the grape. Serve well chilled at 8 to 10 degrees. It suits white fish, salads and shellfish, and makes a fresh, characterful aperitif.
