Description
Palacio de Bornos has made wine at La Seca in Valladolid since 1870, in the heart of D.O. Rueda on the high plateau of Castilla y León. This is a pure Sauvignon Blanc from the winery's own vineyards on gravelly, stony soils that drain freely and reflect heat back into the canopy. Rueda's continental climate brings hot days and cold nights, and that wide daily range is central to the wine: cool nights slow the loss of acidity and lock in the grape's aromatic compounds, so the fruit is picked fresh and expressive. Fermentation is in stainless steel at low temperature, with no oak, to keep the aromatics clean and to the front. The colour is pale straw with green glints. The nose is intensely varietal, with tropical fruit, gooseberry, citrus and white flowers alongside a subtle hint of quince and apple. The palate is fresh, lively and light, dry, with crisp acidity and a zesty, clean finish. This is a direct, aromatic style built for early drinking. Serve well chilled at 8 to 10 degrees in a white glass. It works as an aperitif and with fresh salads, goat cheese, white fish and shellfish.
