Paixar is a Bierzo red from very old Mencía vines, over 80 years old, on slate soils high on south-facing slopes. Twenty-two months in French oak give it dark berry fruit, floral lift and a deep, mineral structure.
Description
Paixar is a single-variety Mencía from the Bierzo appellation in Castilla y León, made from very old vines that are over 80 years old. They grow on south-facing slopes at altitudes between 700 and 1,000 metres, on slate and stony soils across six hectares. That combination is central to the wine: the slate forces roots deep and lends a mineral, slightly smoky cut, the altitude gives cold nights that hold acidity and aromatic freshness, and the old vines yield little, concentrating the fruit. Bierzo's Atlantic-continental climate keeps overall temperatures moderate, suiting the slow ripening Mencía needs. The wine ages 22 months in French oak, a long maturation in which steady oxygen exchange softens the tannins and adds cedar, spice and a savoury depth while the dark fruit holds firm. The colour is deep cherry red. The nose shows dark berries and plum over a floral rose lift, crushed pepper and liquorice, with a clear slatey minerality. The palate is full but fresh, with fine, firm tannins and a long, mineral finish. Serve at 16 to 17 degrees, decanting briefly, with roast beef, lamb or mushroom dishes.
