Description
Pago de los Capellanes Roble is a varietal Tempranillo from the family estate of the same name in the D.O. Ribera del Duero, the high plateau of Castilla y León known for firm, dark-fruited reds. After harvest the grapes go through a brief cold pre-fermentation maceration, which extracts colour and aromatic fruit before the yeasts begin work, followed by a spontaneous alcoholic fermentation driven by the vineyard's own yeasts. The wine then stays on its skins in vat for 22 days, with regular pump-overs and battonage to manage temperature, density and the slow release of tannin and colour. Ageing is short by Ribera standards, five months in French oak, which firms the structure and adds a fine spice while keeping the fruit to the fore. It pours an intense violet-tinged ruby. The nose is built on ripe blackberry and plum with violet, liquorice and a restrained note of toast. The palate is fresh and structured, with the grip and acidity typical of the region's altitude and continental climate, the diurnal swing locking in dark fruit and tension. The finish is firm and clean. Serve at 16 to 17 degrees, decanted, with grilled red meat.
