Description
Pago de Cirsus produces this Vendimia Seleccionada in D.O. Navarra from a blend of Tempranillo, Merlot and Syrah grown at the Finca Bolandín estate at around 350 metres of altitude. The vineyard is planted at 2,800 vines per hectare with a low yield of about 4,800 kilos per hectare, a deliberate restraint that concentrates the fruit. The grapes are hand-harvested between September and October, then given a cold pre-fermentation maceration at five degrees in the cellar, a soak that extracts colour and aroma from the skins before fermentation begins. The blend marries Tempranillo's red fruit and structure with the plummy roundness of Merlot and the pepper and dark fruit of Syrah. Twelve months in French oak knit the components and add cedar and spice while softening the tannins. Expect a deep cherry red with violet glints, youthful and vibrant, the nose offering ripe red and black fruit, plum, vanilla and a peppery spice. The palate is medium to full bodied, ripe and balanced, with fresh acidity, supple tannins and a long, spiced finish. Serve at 16 to 18 degrees, and decant if young. A versatile match for roast and grilled meats.
