Paco & Lola make Lolo in Val do Salnés, the heart of Rías Baixas, from Albariño grown by their grower cooperative near the Atlantic. Fermented young with no ageing, it is all lemon, lime and green apple over a crisp, saline finish.
Description
Lolo is a young Albariño from D.O. Rías Baixas, made by the Paco & Lola cooperative in Val do Salnés, the prime subzone for the grape in Galicia. The cooperative was formed in 2005 by a group of growers in the area and has grown steadily since. Val do Salnés is the coolest and most coastal part of Rías Baixas, exposed to the Atlantic, with granitic sandy soils and high rainfall. Vines are trained high on trellises to keep the fruit clear of ground moisture and to catch sunlight, which helps even ripening in a damp climate. The wine is fermented young in stainless steel with no ageing, a method that preserves the grape's bright primary fruit and its sharp natural acidity. The wine is pale straw with green flecks. The nose is fresh and direct, led by lemon and lime with green apple behind. The palate is crisp and light, the citrus fruit carried on brisk acidity to a clean, saline finish. Serve well chilled at 8 to 10 degrees in a white wine glass. It is at its best as an aperitif or with fresh shellfish and simply cooked white fish.
