Pacific & Lime Tequila Reposado is a 100% Blue Weber tequila made in small batches in the Jalisco valleys under Bruno Barba, a tenth generation tequilier from the Romo de la Peña family and a past co-founder of the Huizache brand. The bottle is the work of brand owner Niksa Pirovic in partnership with Barba, and its calling card is a split cooking method that pairs modern and traditional approaches.
Up to eight year old lowland agave is cooked two ways: part under low pressure in autoclaves, part slowly in a classic brick horno, which broadens the aromatic and flavour range beyond what a single method would give. The nose is led by cooked agave with lemon, oak and a light prickle of white pepper. The palate is silky and mineral, with citrus fruit and a harmonious depth and no artificial sweetness. Rested in oak, it keeps the lowland Jalisco character front and centre.
