Description
Fattoria Ormanni is a long established organic estate in the Chianti Classico zone of Tuscany, and this Borro del Diavolo Riserva is made from Sangiovese, the grape at the heart of the appellation. Chianti Classico, the original hilly heartland between Florence and Siena, has poor stony soils, often the local marl and limestone known as galestro and alberese, and a continental climate with cool nights that preserve acidity. Sangiovese is naturally high in both acidity and tannin, which is what makes these wines so savoury and long lived. As a Riserva it is aged longer, here twenty months in oak; this extended barrel time softens the firm tannin through slow oxygen exchange and adds cedar, tobacco and a fine spice, while the wine gains the leathery, savoury complexity of bottle development. The colour is a garnet tinged ruby. The nose shows sour cherry and plum, with leather, tobacco, dried herbs and a touch of liquorice. The palate is medium to full bodied and structured, with bright acidity, firm grippy tannin and a long, savoury finish. Serve at 17 to 18C and decant. It is a classic match for Tuscan food.
