Description
Origen Raiz Pechuga is a pechuga mezcal made from Cenizo (Agave durangensis) in Durango, an unusual departure from the Oaxaca-centred pechuga tradition. Where most pechuga uses Espadin and chicken or turkey, this one is distilled with deer breast and seasonal fruit, a version of the technique brought north to Durango by maestro mezcalero Valentin Cortes. Origen Raiz is a partnership between the Cortes family of Oaxaca, with six generations of mezcal knowledge, and the Saravia family of Durango.
Pechuga is a third distillation in which a raw breast and a charge of seasonal fruit hang in the still, the protein rounding the spirit while the fruit lifts it. The nose is a subtle pechuga character of light citrus, sweetness and butter, while the palate turns strongly smoky and viscous with a slight heat, the Cenizo agave clearly present and a touch of lime on the finish. Bottled at 50% in a 500 ml format.
