Description
Origen de Resalte is a single-variety Tempranillo from Resalte de Peñafiel in the Ribera del Duero. The winery, founded in 2000 around Peñafiel, owns eighty hectares spread across different aspects, altitudes and soil types, which lets it draw fruit of varied character into one blend. Ribera del Duero is high country, and the wide gap between hot days and cold nights slows ripening, builds colour and tannin and holds the acidity that gives these reds their backbone. The wine completes malolactic fermentation to soften the acidity and round the texture, then ages 18 months in French and American oak. The two woods work differently: French oak lends fine tannin and subtle spice, American oak adds vanilla and coconut, and the slow oxygen passing through the staves settles the structure. The colour is deep cherry red. The nose opens on ripe cherry and raspberry over sweet spice and a vanilla edge from the barrel. The palate is full and structured, the tannins firm but ripe, the oak carried through dark fruit to a long finish. Serve at 17C and decant ahead. Pairs with roast and grilled red meats.
