Description
Saint James is one of Martinique's oldest and largest agricole houses (since 1765), and this XO comes from independent selector Opportune 1791 as a single cask, a six year old vieux distilled from fresh-pressed sugarcane juice on a creole column and matured in ex-bourbon oak.
At six years it meets the AOC XO tier, and tropical ageing means real oak depth for the age. The nose is woody with vanilla, dried fruit and dried apricot, the palate turns woody and green with black pepper and coffee, and the finish stays vegetal, minty and oak-driven. At 40% it is light and easy, a dry, spice-forward agricole that keeps the cane character alongside the wood, offering honest, well-priced sipping rather than heavy richness.
