Description
The Ontake Distillery, based in Kagoshima on the southern island of Kyushu, has built its early identity around sherry maturation, and The 2nd 2025 continues that direction with its second annual single malt release, bottled in 2025 for the Netherlands market. Like the debut expression, it carries no age statement.
Matured in First Fill Sherry Butts with an Oloroso character, the whisky inherits the typically generous dried fruit and sweetness that first-fill sherry wood imparts, while the warm, humid Kagoshima climate encourages rapid interaction between new make and wood. In the house style expected of a young southern Kyushu single malt, the result leans toward richness and roundness at 43%, with the sherry cask doing much of the flavour-building work.
