Description
The Ontake Distillery in Kagoshima, southern Kyushu, produced this 3 Years Old single malt in 2021, and it was bottled in 2025 as a single cask expression by T and T Toyama, the Toyama-based independent bottler known for seeking out young Japanese whisky with distinctive character. At 59.3% it is presented at natural cask strength, uncut from the barrel.
The maturation vessel is a single First Fill Bourbon Barrel, a choice that at three years of age will have contributed clean vanilla and fresh cereal character to what is still a lively, spirit-forward new make. The warm and humid environment of Kagoshima encourages faster wood extraction than cooler climates, so despite its youth the cask will have made an impression. Served at full proof, the whisky rewards a drop of water to open up the underlying fruit and grain character typical of a young ex-bourbon single malt from this region.
