Description
This 1982 sits among the very first Distillers Editions, the annual series in which Oban finishes its West Highland make in Montilla Fino sherry. The spirit comes from the small distillery on the Oban shore, built by the Stevensons in 1794, around which the harbour town slowly grew.
After a full first ageing in ex-Bourbon oak the whisky was transferred into pale Fino wood for its finishing spell. Oban distils slowly on a single pair of tiny stills and condenses the spirit in outdoor worm tubs, the water kept warm so the copper has longer to lighten an otherwise heavy system. Montilla Fino takes its dry, savoury stamp from a thick raft of flor yeast that lives on the wine and strips away colour and sugar.
Reduced to 43% for bottling, the Fino shows its lean side. Spent lignin in the oak leaves a soft vanilla and the wood lactones a thread of coconut, while the pale sherry adds blanched almond, a yeasty bread note and a lift of salt in place of dark fruit. That nutty dryness sharpens the honey, orange peel and brine of the make, the smoke faint and the close long and saline. As one of the first of these editions, it set the dry, savoury template the line has followed ever since.
