Description
Nueve Tequila Añejo is a 100% Blue Weber tequila drawing on highland agave from Los Altos in Jalisco, a German-Mexican project from founders Bastian and Lilián Weller made alongside their tequila master in Jalisco. The fruity, sweeter highland piñas are left to mature eight to twelve years before harvest, cut close to the heart with a coa in the traditional way.
The agave hearts are baked slowly in brick ovens for fifty four hours to soften the fruit without heavy caramelisation, then fermented with natural yeast in stainless steel over roughly two and a half days and twice distilled. The spirit then rests two years in bourbon oak casks, which lend it a soft mix of honey, vanilla and toasted oak over the agave. Bottled at 38%, it finishes mild and warm with a gentle sweetness.
