Description
Sistema Vinari is the natural wine project of Eloi Cedó, a former member of the 4 Kilos team who set out to capture the purest expression of Mallorca's indigenous varieties and terroirs. This red blends Callet and Manto Negro, two native island grapes suited to the warm Mediterranean climate and the sea breezes that moderate ripening. The wine is made by carbonic maceration, where whole bunches ferment in a carbon-dioxide-rich environment so that fermentation begins inside each berry. That method emphasises bright red fruit and a supple, low-tannin texture, and it is the source of the wine's youthful, aromatic character. It then spends six months in barrel, softening the structure without dominating the fruit. The colour is bright ruby. The nose shows wild raspberry, red currant and cherry with a floral, slightly peppery lift and a mineral edge from the island soils. The palate is light-bodied, juicy and fresh, built for early drinking. Serve lightly chilled at 13 to 14 degrees. It pairs with charcuterie, roast pork, poultry and mushroom dishes.
