Description
Bottled by the German independent Alambic Classique from their Rare and Old Selection, this is a single cask North of Scotland distilled in 1973 and held for 34 years. It comes from the lost grain distillery at Cambus, beside the Forth in Clackmannanshire, the plant George Christie built inside the old Forth Brewery and closed in 1980, and is one of 119 bottles from cask 78753.
The spirit ran from patent stills on a wide congener cut that gave North of Scotland more body and ageing stamina than typical grain. Thirty four years in a single ex-Bourbon barrel sits in the oxidative and evaporative phase, where dried fruit and leather emerge as the spirit slowly concentrates and the cask imprint deepens without overwhelming the light maize sweetness underneath.
Bottled at full cask strength of 49.7%, it holds its power well for its age. Lignin breakdown gives vanillin and clear vanilla, hemicellulose caramelisation in the toasted staves brings toffee and fudge, and oak lactones add a coconut creaminess. Decades of gentle oxidation layer in soft dried fruit and old polished wood, with tannins providing grip rather than dryness.
