NODO Tequilana Blanco

NODO Tequilana Blanco is a rare destilado de agave from Zacatecas, made from the Blue Weber agave, the same Agave tequilana used for tequila, yet produced outside the tequila denomination and so honestly labelled an agave spirit rather than tequila. Unaged and made by the Banuelos family, it is built to show the agave undisturbed by wood or additives.
The hearts are cooked for 24 hours at low pressure in a twenty tonne autoclave, then milled and juiced with a mechanical roller mill. Fermentation runs in stainless steel with deep well water and wild yeast, after which the mosto is twice distilled in a hybrid still of stainless steel and copper. The clean, steam cooked profile leans cooked agave, herbs and honey on the nose, with cashew, white pepper and peppermint on the palate, the steam cook keeping it bright rather than smoky. Bottled at 40 percent with nothing added.
