Description
Nobilis bottled this single cask of Versailles, labelled Enmore (Versailles) No. 8 for Cavavin Belval, from the 1990 vintage and aged thirty years. The VSG marque and the single wooden pot still place it squarely in Versailles, the bracing, tannic greenheart pot that sits between elegant Enmore and oily Port Mourant.
Distilled from molasses and matured in US ex-bourbon oak to a dry, unsweetened finish, it is timber from start to close. The nose gives allspice, toasted oak and varnish, the palate turns roasted and herbal with black pepper and dark wood, and the finish brings liquorice, pencil shavings, anise and a curl of smoke, with citrus and wet wood underneath. At 53.8 percent and three decades old it stays balanced and recognisably classic, a dark, smoky Versailles for drinkers who want the wood front and centre.
