Description
No. 209 takes its name from the distillery's original federal registration number, and its 5XD bottling earns its initials honestly: five passes through the still at the San Francisco house, chasing a purity most gins never reach. The botanical bill leans classic but confident, juniper joined by coriander seed, cardamom, angelica and bergamot, with citrus peels added for brightness. The fivefold distillation smooths every edge while keeping the aromatics intact.
The nose is juniper-forward, laced with fresh citrus, floral hints and a quiet spice. The palate is complex and even-handed, cardamom and coriander framing a fine citrus freshness and a whisper of sweetness, before a long, elegant finish carrying pepper and zest. It makes a clean, aromatic Martini, or pour it long over tonic with a sprig of rosemary.
