Nisia is Jorge Ordoñez’s Verdejo from Rueda, drawn from ungrafted centenarian vines growing above 1,000 metres on poor sandy soils. Fermented mostly in steel with four months on lees, it is fresh and herbal with lemon, green apple and a saline edge.

Description
Nisia is made by Jorge Ordoñez in the Rueda region of Castilla y León. The wine comes from ungrafted, hundred year old Verdejo vines planted on poor, sandy soils that survived phylloxera and sit at around 1,000 metres of altitude. That elevation drives a wide day to night temperature swing, which slows ripening and locks in the grape's aromatics and acidity, while the sandy, low vigour soil keeps the vines naturally small in yield. Around ninety percent of the wine ferments in stainless steel at low temperature to protect the fruit, then rests four months on its lees for added texture and depth. The remaining ten percent ferments in French oak, which broadens the mid palate without adding obvious wood. The colour is pale straw. The nose is classic Verdejo, with lemon, green apple and melon over thyme and dried herbs, and a faint bitter almond twist on the edge. The palate is fresh and dry, the ripe citrus fruit cut by bright acidity and a saline, herbal finish. Serve well chilled at 8 to 10 degrees.
