Description
Nicolas Mariotti Bindi makes this Cantina di Torra red in northern Corsica from Niellucciu, the grape the Pisans brought to the island and whose name comes from the Corsican for black. The vineyards sit in Patrimonio, on the clay and limestone slopes around the Golfe de Saint-Florent, where a hot Mediterranean climate is tempered by sea winds and cool nights. Farming is organic and the wine is made along natural lines, with no added yeasts. This is the fresh, unoaked expression, fermented and raised in stainless steel to keep the fruit bright and the texture lively. Without wood the grape's red fruit and herbal side come through directly, and the tank ageing preserves its youthful energy. The wine is vivid ruby, leading on blackberry and plum with a lift of wild herbs, violet and a peppery edge, all carried by fresh acidity and soft, gentle tannins. At 12 percent alcohol it is light and easy drinking. Serve at 14 to 16 degrees, lightly chilled if you like, with charcuterie, grilled vegetables or roast chicken.
