Champagne Nicolas Feuillatte works from Chouilly in the Côte des Blancs, and this Réserve Exclusive Rosé blends the three classic Champagne grapes, Pinot Noir, Chardonnay and Pinot Meunier. The wine is made by traditional bottle fermentation, with a second fermentation in bottle followed by ageing on the lees, and its salmon colour comes from red-wine components in the blend. The house style here is fresh and fruit-forward, with the Pinot Noir driving the red-berry character while Chardonnay keeps the wine lively and precise. Dosage sits in the Brut range, so the finish stays dry.
The colour is a bright salmon with a delicate copper reflection and a fine, lively bead. The nose leads with red berries, raspberry and strawberry, with a hint of pomegranate, citrus freshness and delicate floral notes. The palate is fruity and balanced, with elegant acidity, a fine mousse and a clean finish. Serve chilled at 8 to 10 degrees in a white wine glass. It makes a festive aperitif and pairs with grilled salmon and tuna tartare, goat cheese with berries or a strawberry dessert.
