A young Martinique agricole from Neisson in the elevee sous bois style, lightly aged in ex-bourbon oak and bottled at 50%, sitting between blanc and vieux with grassy sugarcane, baked apple, citrus and gentle spice, a lively mixer.
Description
Neisson is a small family Martinique distillery with a strong following for its whites, and this Eleve Sous Bois is its lightly aged agricole, pressed from fresh cane juice and bottled at 50%. With brief oak contact it bridges the gap between a fresh blanc and a fully aged vieux, keeping plenty of cane character.
The short maturation shapes rather than transforms the spirit: a nose of sugarcane, vanilla, grass and vegetal cane, a palate of cane, vegetal notes, wood and citrus, then a finish of oak, black pepper and warm sugarcane. There is a bright grassiness and a baked-apple sweetness that keep it lively. The light wood means it sits between styles, which makes it a versatile pour, holding its own in tiki and citrus-led drinks while still readable neat for fans of young agricole.
