Neisson is one of Martinique's small family distilleries, a longtime favourite for those who chase agricole character, and Profil 107 is one of its strength led expressions. Distilled from fresh cane juice rather than molasses, it sits early in its ageing, just over a year in oak, so it keeps a clear cane core while the wood begins to add colour and spice. It is unsweetened, true to the AOC, and bottled at a lively 52.8%.
Short time in Ex-Bourbon wood gives it a particular signature: the fresh, grassy Neisson backbone wrapped in burnt sugar, vanilla and a creme brulee sweetness that comes from the cask rather than any dosage.
