Description
Sauvignon vom Opok is a biodynamic Styrian white from Maria and Sepp Muster, pioneers of natural viticulture in southern Austria. They began their project in 2000 on ten hectares of family land near the Slovenian border, and the vineyards were certified biodynamic within three years. The wine is named for the opok, the grey marl and sandstone soil of the region, which gives Styrian whites their lean cut and pronounced minerality. The steep, cool climate slopes hold acidity and aromatic tension in the fruit. Farming is by biodynamic method, and in the cellar the wine is fermented with wild yeasts and raised without new oak and with minimal intervention, which builds savoury depth and texture while keeping the site's stony character clear. The colour is pale with a slight haze in the natural style. The nose is restrained and mineral, showing green apple, grapefruit and white flowers, and the palate is lean, dry and structured with a salty, savoury grip. Serve it around 10 to 11 degrees.
