Muchada-Leclapart Univers is a still Palomino from the albariza chalk of Cadiz, made biodynamically by Alejandro Muchada and David Leclapart. Aged on its lees, it is saline and taut, with lemon, green apple and a chalky mineral cut.
Description
Univers is an unfortified white from VT Cadiz in Andalusia, made from Palomino, the grape of Jerez, by the biodynamic partnership of Alejandro Muchada and Champagne grower David Leclapart. The vineyards sit on albariza, the bright chalk soil of the Marco de Jerez that holds winter rain deep in its profile and reflects light back into the canopy, feeding acidity and a mineral, saline character. Farming is biodynamic, and the wine is fermented dry and aged on its fine lees rather than under flor, so it keeps the pale colour and freshness of a still white while the lees contact adds texture and a subtle bready depth. Expect a nose of lemon, green apple and white flowers with chamomile and a clear salty note. The palate is dry and tightly wound, driven by acidity and chalk minerality, with an almond hint and a long saline finish. Serve at 10 to 12 degrees in a white glass. It is built for the sea, from oysters and clams through to grilled white fish.
