Description
Signatory Vintage, one of Scotland's largest independent bottlers, bottles this 8 Year Old, a 2012 vintage, a small parcel of casks. Mortlach, the Beast of Dufftown, condenses its spirit in worm tubs and part-triple-distils through the tiny Wee Witchie still, building weight and a savoury, sulphury core.
Eight years in ex-Bourbon left the meaty spirit forward, the charred oak filtering the sharpest sulphur while vanillin began leaching from the wood.
At 40% it shows honey, dried fruit and a leathery depth over the full-bodied base. A Beast of Dufftown.
