    Signatory Vintage, one of Scotland's largest independent bottlers, selected this 32 Year Old: a 1991 vintage, cask 4241, an outturn of 580 bottles. Mortlach, owned by John Walker & Sons from 1923, makes a dense, sulphury Speyside through worm tubs and its singular 2.81-times distillation.

    Thirty-two years in Oloroso drew the dense Mortlach spirit to a profound depth, long oxidation and heavy evaporation over figgy dried fruit, leather and old wood.

    At 54.1% it shows cooked fruit, fresh fruit, a nutty depth and a sherried weight, undiluted. A Beast of Dufftown.
