    Duncan Taylor, the Huntly independent with one of Scotland's deepest cask inventories, selected this 16 Year Old: a 1995 from cask 7287, an outturn of 643 bottles. The first legal distillery in Dufftown, Mortlach builds its meaty weight through low-copper worm tubs and the 2.81 distillation, and has anchored Johnnie Walker for a century.

    By sixteen years the meaty spirit had turned rich and oxidative in the Oloroso, raisin, walnut, chocolate and a struck-match savour.

    At 51.3% it shows chocolate, dried fruit, a nutty depth, an oily texture and a sherried weight, undiluted. Big, savoury and full-bodied.
