Description
Signatory Vintage, the Edinburgh independent founded in 1988, bottles this 14 Year Old: a 2007 vintage, cask 3, an outturn of 687 bottles. Mortlach, the first licensed distillery in Dufftown, runs a 2.81-times distillation and worm-tub condensers that give the heavy, meaty spirit fans call the Beast of Dufftown.
By fourteen years the Oloroso had married Mortlach's weighty make, melanoidins lending dried fruit and chocolate to the savoury depth.
At 52% it shows dried fruit, a sherried depth, old wood, chocolate, cooked fruit and malt extract, undiluted. Big, savoury and full-bodied.
