    Signatory Vintage, the Edinburgh independent founded in 1988, selected this 14 Year Old, a 2007 vintage from cask 2, an outturn of 698 bottles. Mortlach, owned by John Walker & Sons from 1923, makes a dense, sulphury Speyside through worm tubs and its singular 2.81-times distillation.

    Across fourteen years the Oloroso butt loaded the heavy spirit with date, raisin and a nutty edge, weight and sherry meeting head on.

    At 52.2% it shows dried fruit, a sherried depth, tobacco, chocolate, fresh fruit and leather, undiluted. Big, savoury and full-bodied.
