Description
Moreau-Naudet Petit Chablis is a single-variety Chardonnay from the AOC Petit Chablis, made by a century-old estate in the Yonne. The wine comes from one three-hectare plot on the slopes of Chablis, planted on fine, very chalky Portlandian limestone soils with vines of twenty to fifty years. This hard limestone cap gives Petit Chablis its bright, stony character, and Chablis sits at the cool northern edge of Burgundy where a short, marginal growing season keeps acidity high and the fruit lean and citric. Fermentation runs on the vineyard's native yeasts, and the wine then ages around eighteen months in tank rather than oak, a long stainless-steel élevage on lees that adds mid-palate texture and a saline depth while preserving the pure, mineral fruit. The colour is pale straw with green tints. The nose shows lemon, green apple and white peach, with white flowers and a chalky, faintly saline edge. The palate is dry, taut and precise, the citrus fruit carried on brisk acidity to a clean, stony finish. Serve well chilled at 9 to 10 degrees in a white glass.

The natural match is oysters, moules or a plate of raw shellfish. Its chalky freshness also suits grilled sole, goat cheese and simple green salads.
