Description
Moreau-Naudet Chablis is an organic Chardonnay from the AOC Chablis, the cool, northern outpost of Burgundy. The domaine built its reputation under Stéphane Moreau and, since his death in 2016, has continued under his wife Virginie Moreau, making wines that age well yet drink easily. Chablis owes its character to its geology: the Kimmeridgian marl beneath these vineyards is a limestone laced with fossilised oyster shells, and that seam is the source of the appellation's chalky, saline cut. The northern climate keeps ripeness restrained and acidity high. The wine is fermented without new oak and aged on its fine lees, where slow autolysis adds a rounder texture and a light savoury depth while leaving the fruit and minerality clear. Malolactic fermentation tempers the sharper acidity. The colour is pale gold with a green tint. The nose shows green apple, lemon and a flinty, stony note. The palate is dry, taut and mineral, with citrus fruit and a long saline finish. Serve well chilled at 9 to 11 degrees.
