Morasinsi farm this single varietal Aglianico on the warm Alta Murgia plateau of Puglia, on clay over limestone. Twenty months in concrete and a natural ferment give a dark, structured red with black cherry, dried herbs and a firm savoury grip.

Description
Morasinsi is a natural winegrowing project on the Alta Murgia, the high limestone plateau of inland Puglia. Sferra Cavallo is a single varietal Aglianico, a late ripening southern Italian grape known for deep colour, high tannin and bright acidity. The clay over limestone soil holds water through the hot, dry summer and feeds steady ripening, while warm days and cooler plateau nights preserve the acidity that keeps the wine fresh despite its weight. Fruit is fermented with native yeast and aged twenty months in concrete tanks, which let the wine settle and soften without adding any oak character, so the fruit and the soil lead. The colour is deep ruby moving to garnet. The nose is ripe black cherry and plum with dried herbs, leather and liquorice. The palate is full and firm, with the structured tannin typical of Aglianico framing dark fruit, earth and a savoury, mineral finish. Serve at 16 to 18 degrees and decant an hour ahead to open the tannin. It suits roast lamb, braised beef and aged hard cheese.
