Avelino Vegas grows this Rueda white from Verdejo vines close to a century old, on small plots reserved for the variety. A short cold soak before pressing sharpens the aromatics, giving lemon, green apple and a dry herbal edge.

Description
Montespina Verdejo is a single variety white from D.O. Rueda, made by Avelino Vegas. The fruit comes from old vineyards nearing a hundred years of age, planted on small plots of one to three hectares that carry only Verdejo. Rueda sits on a high plateau of Castilla y Leon, where wide day to night temperature swings slow ripening and hold on to the natural acidity that gives the wine its cut. Verdejo is prone to oxidation, so the grapes are picked after close monitoring of ripeness and given a short cold maceration on the skins, which pulls out aroma compounds while the low temperature protects freshness. A gentle press and a cool, controlled fermentation keep the fruit clean and precise. The colour is pale straw with green tints. The nose is lemon, green apple and white peach, with the dried herb and light bitter almond character typical of the grape. The palate is dry and crisp, the acidity firm, closing on citrus peel and a savoury herbal note. Serve at 8 to 10 degrees in a white wine glass.
