    Montenovo is Valdesil's entry Godello from Valdeorras, in the eastern corner of Galicia. Valdesil is a name closely tied to the revival of the Godello grape, and this wine comes from younger vineyards of around fifteen years, hand harvested and selected in the winery. Valdeorras sits inland on slate and granite soils, at altitude and away from the direct Atlantic influence, which gives warm days for ripening and cool nights that hold on to acidity and freshness. After a short skin maceration to draw out aroma and texture, the wine ferments with indigenous yeasts native to the vineyard, which adds complexity and a sense of place. It is then cold stabilised and lightly filtered to keep it clean and fresh. Godello is a fuller-bodied white grape, and the wine shows it: pale straw in the glass, with white peach, pear and melon on the nose over white flowers. The palate is textured and balanced, with ripe stone fruit fruit set against a mineral, saline freshness and a long finish. Serve it at 9 to 11 degrees with white fish, seafood or roast chicken.
