MM Extra Dry

Matheus Muller is one of the long-established Sekt houses of the German Rhine, and MM Extra is its accessible tank-method sparkling wine. The base is built around Riesling and Weissburgunder, the classic German grapes for bright, orchard-fruited fizz. The second fermentation is carried out in pressurised tanks rather than in bottle, a method that keeps the primary fruit of the grapes to the fore and gives a clean, lively bead. The wine is finished in the extra dry style, so there is a small measure of fruit sweetness balancing the acidity.

Expect a pale straw colour with a fine stream of bubbles. The nose is fresh and simple, leading with green apple, pear and a hint of white flowers, and the palate is light and easy with a clean citrus finish. Serve it well chilled at around 6 to 8 degrees as an aperitif. It works with green salads, light white fish and a plate of prawns, and suits sociable occasions where an uncomplicated glass is what the moment calls for.
