Description
Miros de Ribera Vendimia Seleccionada is a 100 percent Tempranillo, known locally as Tinto Fino, from Bodega Peñafiel in the D.O. Ribera del Duero. The fruit is selected first in the vineyard, then again on sorting tables before destemming, a double pass that keeps only the best grapes. Ribera del Duero sits on a high plateau where a continental climate brings hot days and cold nights; that wide diurnal swing slows ripening, preserves acidity and builds the colour and tannin behind these reds. Fermentation runs at controlled temperature in stainless steel truncated-cone tanks over twelve days, a shape that maximises contact between juice and skins for deeper colour and phenolic extraction. The wine then ages twenty months in French oak barrels, where malolactic fermentation softens the acidity and slow oxygen exchange through the staves firms the structure and adds vanilla, clove and toast. The result is a deep cherry red with ripe blackberry and plum fruit, sweet spice and a smoky, oaked edge. The palate is full and structured, the tannins firm but ripe, the finish long. Serve at 17 to 18 degrees after a decant. It suits roast and grilled red meats and aged cheeses.
