Description
Miros de Ribera M10 is a red from Ribera del Duero in Castilla y León, blending the local Tempranillo with Cabernet Sauvignon and Merlot. The fruit is hand harvested into small crates and sorted on the table before destemming, then fermented in stainless steel conical tanks for thirteen days at a controlled 24 to 26 degrees, a temperature band warm enough to extract colour and structure but held in check to keep the aromas clean. The wine is then pumped over the skins daily for two weeks, an extended maceration that draws out the firm tannin and deep pigment Ribera is known for, before malolactic fermentation in the same tanks converts the sharp malic acid into softer lactic acid for a rounder palate. Ribera del Duero's high plateau brings cold nights and a wide diurnal range that ripen the grapes while preserving acidity and colour. Ageing runs six months in French Allier oak, a fine grained wood that lends measured spice and slow oxygen exchange. The colour is deep purple. The nose shows black plum, cherry and red currant over black pepper, vanilla and dark chocolate, and the palate is full and structured, the ripe fruit framed by grainy tannins and fresh acidity. Serve at 16 to 18 degrees with grilled red meat.
