Viñas Serranas makes Miranda from Rufete, the delicate native grape of D.O. Sierra de Salamanca. Thirteen months in foudre give a pale, perfumed red with red berries, floral notes and a fresh, lightly peppery palate.
Description
Miranda comes from Viñas Serranas in D.O. Sierra de Salamanca, a mountainous Castilla y León appellation on granite and slate soils in the Sierra de Francia. The wine is made from Rufete, a thin-skinned native grape that gives pale, aromatic and delicately structured reds rather than dense ones. The vineyards sit on steep slopes at altitude, where granitic and slaty soils and a cool mountain climate slow ripening and lock in freshness and floral aromatics. Rufete's light pigmentation and modest tannin mean the winemaking is gentle, and here the wine matures thirteen months in foudre, large old oak casks that allow slow micro-oxygenation and soften the wine without adding obvious oak flavour or weight. The colour is light cherry red. The nose is perfumed, with fresh red berries, cherry, rose and wild herbs over a stony base. The palate is light bodied and fresh, with bright acidity, fine tannin and a lightly peppery, mineral finish. Serve cool, at 14 to 15 degrees. It suits lighter dishes such as roast chicken, pork and mushrooms.
